Make a copy of your theme's about.tpl and put it into your template-extension directory. Then, under Configuration > Templates, bind that custom about.tpl file to the theme to override it. Then make whatever changes you want to your custom about.tpl (I usually name mine something different so I know it's something I changed, for example wr-about.tpl).
