I'm completely new to Piwigo. I need it on my phone but don't understand what the server address is. I have set it up by self hosting on my linux desktop. I'm not at all familiar with it so really need some help kicking off.

Thanks for responding.
I have recently started to switch to privacy friendly services. Piwigo has been widely recommended as such an alternative for Google Photos. That is how I intend to use it. I'm guessing the web platform is primarily meant for professionals to display their work but that is not how I mean to use it as of now. Simply an app to keep my pictures in my phone locally and away from google.

Then Piwigo is not for you. The Piwigo gallery runs on your own or a hosting provider's web server and stores photos there. The smartphone app just uploads photos from your phone to the server gallery.
What you probably want is some photo organizing software locally on your smartphone like A Photo Manager or Simple Gallery Pro. (the F-Droid repository is an alternative to the Google Play Store for Free and Open Source Software).

With Piwigo installed on your home Linux machine, your photos would be available ONLY on your home network.
To make your photos available everywhere on the internet, you would need to get a web host (see the wiki link I posted before).
It's actually not that expensive, and very rewarding. I do recommend self hosting. It does require a new set of computer skills, though, so you need to be adventurous and ready to learn.
That being said, Piwigo isn't EXACTLY a Google Photos replacement. It is more of a display gallery for showing off your photos on the web. It will not automatically sync photos from your phone (yet), for example.

Similar with a twist.........
I heard that Piwigo was a good alternative to Google, so I paid for a year and have been accessing it on the web. Then a few days ago I loaded the Piwigo app on my phone, and it asked for a 'server address'. I have no idea what to put there. Do I understand correctly from one response to another question, that Piwigo is not suitable for me??? I hate to think now of removing all my my photos!

The server address should be the URL to your gallery, so if on piwigo.com then something like
https://YOURGALLERY.piwigo.com/
