How to edit the metadata output?
Hello
as default the metadata echoed in the frontend is:
-Autor / Author
-Erstellt am / generated at
-Veröffentlicht am / published at
-Schlagworte / tags
-Alben / album
-Besuche / Visits
How and where can i edit which data should be shown in the frontend and which not?

Look under Configuration > Options > Display > Photo Properties. You can turn and and off the items you want shown.

Not sure. You might be able to override the template with an extension, it might also depend on what theme you're using.

I think that with the plugin Manage Properties photos you can change the order of the properties. I am not sure for the metadata.

I followed the advice of @katryne and installed the Plugin "Manage Properties Photos".
Without beeing asked it added fields - more or less even more useless than the ones i wanted to get rid of
So i deactivated it.
The fields were still there
So i deleted it
The fields are still there
The question now is:
How to i get rid of the fields i never asked for?

Look at the settings of the plugin. It manages not only the display order, but it can display or hide each data, and very precisely for each visitor category, from webmaster to guest.

It ADDED fields WITHOUT asking just by installing it.
How do i get rid of them?
A small research indicates, that all the fields have been written into the database and that i have to alter the database to remove them from the frontend
That will take some time
If this turns out to be true than this concept / plugin is just poor.
Besides that:
The fields i have now in the frontend ("useful" stuff like ExifVersion or ExposureBiasValue) have not been in the list of editable fields

If i disable "Author" i get:

And all the additional fields i did not ask for are still there.
There are no corresponding fields to disable in the backend of your plugin to get the fields remove which have been added just by installing it.
Since it is your personal plugin you should be interested in improving your work, shouldnt you?

Have you checked your config (via Local Files Editor plugin)? That's where you can control what EXIF/IPTC fields appear:
