After Sync'ing my galleries folder with my Piwigo infrastructure
After Sync'ing my galleries folder with my Piwigo infrastructure, is it safe to delete everything in the galleries folder? I guess my question is whether it is a one-way sync, or a two-way sync...

No. If you're using the galleries folder you're using physical folders (as opposed to using the uploads folder) so if you delete those folders, you'll lose all your photos since when you next sync, Piwigo will remove all those photos from its database.
