The trick is to install Piwigo directly in the subpath, not moving it there after installation.
That can be done by starting the docker container, then moving all files in the preferred directory and then installing it over the Webserver in this directory. If you stop the container after the files moved but before having Piwigo installed it will download the file in the root path again.
