I would like to suggest using a [sub-] board for every available plugin and theme, as it is already now not so easy to find the relevant threads, and I am sure this project will grow strongly in the future, so [sub-] boards will be needed.
Do not have fear of large board listings - I have some forum admin experience and long board listings are absolutely no problem, if there are simple and clear entities for differentiation - what is naturally given for plugins and themes, so having distinct boards for these will be a good help for long term segmentation of the content - also it will be much easier to extract and aggregate user collected knowledge from distinct boards (e.g. for sticky posts, FAQs and documentation).
Also it would be good to have links from the plugin / themes listing to the dedicated [sub-] board then, to easily find ongoing discussions / issues.

They are more 200 extension is very long liste ;-)
The extension author can add link on post in the extension page
